Satay Chicken Rainbow Rice Paper Wraps

Ingredients.


(For The Rolls)

1 Chicken Brest.

1 Cucumber.

1 Red Onion.

1 Bunch of Coriander.

1 Large Carrot.

2 Bunches of Vermicelli Noodles.

1/2 A Head Of Iceberg Lettuce.

1 Packet Of Rice Paper Wraps.


(For The Satay Sauce)

2 Teaspoons of curry Powder.

1 Cup of Peanut Butter.

1 Can of Coconut cream.

2 Garlic Cloves, minced.

1 Bunch of Coriander Stalks, Finely chopped.

1 Tablespoon of Brown Sugar.

1/2 a teaspoon of chilli powder.

1.5 cups of water.

Salt and Pepper.


Method.


Starting with the satay sauce, on a medium/low heat add 1 teaspoon of neutral oil to your medium saucepan. Once the oil is heated you can add your Garlic and sauté for 1 minute, then adding your curry powder and fry that off for another minute or till fragrant.


Then straight in with your coconut cream, peanut butter, chilli powder, sugar and about half of your water. Bring all of that to a simmer constantly stirring. Once the peanut butter has melted down, reduce the heat to the lowest setting, add your coriander stalks and more water if needed and heat while stirring for another 4-5 minutes.


Then slicing the chicken Brest in to 2 steaks (the same way you would for chicken schnitzel) season with salt and pepper and pan fry till cooked, leave to the side to rest then cut in to strips.

Then, finely slice lettuce and red onion, grate the carrot, cut your cucumber into big long match sticks and cook your glass noodles.


Then prepare your building station with a wet tea towel folded in half, a large bowl filled with warm/hot water, your sauce and fillings.


Then to build the rice paper rolls simply start by quickly dipping your rice paper sheet into the hot water and making sure to pull it out the second the whole wrap has been wet (the less time spent in the hot water, the easier they’re to use) then pop it onto your wet tea towel and start to lay down a few strips of chicken, satay sauce, cucumber, red onion, carrots, coriander, glass noodles then top with your shredded iceberg lettuce (making sure to keep everything in a neat cigar shape)

Then to roll simply just fold the top down towards yourself, fold in both the sides then continue rolling towards yourself trying to keep it as tight as possible without ripping the rice paper wraps.


HOT TIP: if you’re having trouble getting tight wraps or that they keep busting you can wrap each one a second time.


Garnish with some toasted sesame, coriander and serve with some satay sauce on the side.
